Banana Cookies

INGREDIENTS:
3 very ripe bananas, mashed
1/2 c. butter
1 c. brown sugar, packed
4 egg whites
3 c. oats
2 tbsp. flour
1/4 c. milk
1 1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla or banana flavoring
Chocolate chips and/or nuts (as you wish)
DIRECTIONS:
Mix first 3 ingredients together in a bowl. Add egg whites and mix. Add remaining ingredients except nuts and/or chocolate chips. After dough is mixed add nuts and/or chocolate chips. Batter will seem too liquid but drop on cookie sheet anyway.
Bake at 350 degrees F. for 12 to 15 minutes.

Apple Baked Beans
INGREDIENTS:
3 (16-ounce) cans pork & beans, fat pieces removed (if any)
1/2 cup prepared barbecue sauce
1/2 medium onion, chopped
2 Red Delicious apples, peeled and chopped
2 tablespoons yellow prepared mustard
4 slices lean center cut thin bacon, cut into 1-inch pieces
DIRECTIONS:
Preheat oven to 375 degrees F. In an oven-proof glass baking dish, mixbeans, BBQ sauce, chopped onion, chopped apples, and mustard until combined. Place bacon pieces evenly over the top. Bake for 45 mins.
Remove from oven and mix in the cooked bacon. Return to oven and bake an additional 30 mins. This can be made in advance and reheated. Reheat in 350-degree F. oven for about 25 mins until hot. Yield: 10 to 12 servings

Raspberry Crisp
INGREDIENTS:
4 cups fresh or frozen raspberries
1/3 cup sugar
1/3 cup flour PLUS 3 Tbsp flour divided
3/4 cup quick cooking oats
1/3 cup brown sugar
1/4 cup cold butter
DIRECTIONS:
In bowl, gently toss raspberries with sugar and 3 Tbsp flour. Transfer to a greased 9 inch square pan. In another bowl, combine oats, brown sugar, and remaining flour. Cut in butter until mixture resembles coarse crumbs. Sprinkle over berries. Bake at 350 for 30 minutes.

Classic Sour Cream Cheesecake
INGREDIENTS:
1 1/2 cups shortbread cookie crumbs (about 24 cookies)
2 Tbsp butter, melted
3 ( 8 oz each) cream cheese, softened
1 (14 oz) can sweetened condensed milk
4 eggs
1 (8oz) sour cream
1 Tbsp vanilla
DIRECTIONS:
Preheat oven to 350. Combine crumbs and butter. Press firmly into the bottom a 9 inch springform pan. Beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Beat in eggs then sour cream and vanilla. Pour into prepared pan. Bake 50-55 minutes or until lightly browned around edges. Center will be slightly soft. Cool. Chill. Garnish as desired. Refrigerate leftovers.

Frosted Meatloaf
INGREDIENTS:
1 1/2 pounds ground beef
1 (10 oz.) can of cream of mushroom soup
1 cup small bread cubes
1/2 cup finely chopped onion
1 egg, beaten
1/2 teaspoon salt
Dash of pepper
2 cups mashed potatoes
1/4 cup water
1 to 2 tablespoons bacon drippings
DIRECTIONS:
Mix beef, 1/2 cup soup bread, onion, egg, salt and pepper. Shape into firm loaf. Place in shallow baking pan. Bake at 350 degrees for one hour. FROST WITH POTATOES. Bake 15 minutes more. Blend remaining soup, water and drippings. Serve with loaf. Makes 4 to 6 servings.

Butter Pecan Cookies

These cookies are very moist.
INGREDIENTS:
1 cup butter, softened
2/3 cup packed brown sugar
1 egg
2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 cups pecan halves
DIRECTIONS:
1. In a large bowl, cream butter, brown sugar and egg. Mix until well blended.
2. Slowly add flour and salt and mix well. Cover and refrigerate for at least one hour.
3. Preheat oven to 375 degrees F.
4. Roll one inch pieces of dough into balls and place 2 inches apart on cookie sheets. Flatten balls with the bottom of a glass dipped in flour. Press a pecan into top of dough.
5. Bake 10 to 12 minutes until lightly colored.

Cheesecake Cookies
INGREDIENTS:
1/3 cup butter
1/3 cup brown sugar
1 cup flour
1/2 cup walnuts, finely chopped
1/4 cup sugar
8 oz. pkg. cream cheese
1 egg
2 T. milk
1 T. lemon juice
1/2 t. vanilla extract
DIRECTIONS:
Cream butter with brown sugar in a small mixing bowl. Add flour and walnuts; blend together. Mixture will be crumbly. Reserve one cup for topping Press remainder of mixture into the bottom of an 8x 8" baking pan. Bake at 350 for 12-15 minutes or until lightly browned. Blend sugar with cream cheese until smooth. Add egg, milk, lemon juice and vanilla; beat well. Spread over baked crust and sprinkle with reserved topping. Bake for 15 minutes. Cool. Cut into 2" squares.
